Easy chocolate chip cookies

Yes they are really easy to make. I have to admit that I was inspired by Nigella’s chocolate chip recipe but I changed it to suit the ingredients I had in my cupboard.
I think I’ve done a pretty good job and my daughter and hubby really enjoy eating them. Really good and not very sugary.

 

Here are the ingredients that I used:
– 150 gr soft unsalted butter;
– 200 gr caster sugar;
– 2 teaspoon vanilla extract;
– 2 eggs;
– 300 gr plain flour;
– 1/2 teaspoon bicarbonate of soda;
– chocolate – Cadbury buttons cut small(I didn’t have an chocolate chips), white chocolate for decoration;

Firstly preheat the oven to 170C and line a baking sheet with baking paper.

Melt the butter in microwave and let it cool a little bit. When cool put in a bowl and add the sugar and vanilla and miss slowly. Next add the the eggs one by one and mix gently until the mixture is light and creamy.
Fold in the 300 gr of plain flour. Add spoon by spoon and mix slowly. When all flour is mixed in add the bicarbonate and mix too.
At the end add the chocolate until all folded in.
Scoop the mixture on the baking sheet. I choose to do it with a medium spoon and baked about 3 batches. I think is best they are smaller as my daughter will eat less.

Put in the oven for 15-17 minutes or until they become a bit brown.
