Yummy cottage pie

This afternoon the weather was that brilliant so I decided to cook a cottage pie for dinner. Cottage pie is one of the family favourite. So hearty and yummy!
It reminds me a bit of the Romanian Musaca even that one is a lot dryer than cottage pie. I didn’t use any exact quantities for vegetables or potatoes. Only for mince – 400gr of organic mince beef from Sainsbury.

So I peeled about 10 potatoes I think….and cut them as small as I could. The smaller you cut them the faster they boil. I put all the cut potatoes in a pan and leave them to boil on a low heat.
Separately in a large pan I put a bit of vegetable oil to warm and then added some diced white onion:

I let it brown a little bit and then added a little a bit of water and let it cooked a bit longer. When the water evaporated I added the mince.
While the mince was browning I peeled,cut and diced the rest of the ingredients/vegetables. I usually use whatever vegetables I have in the fridge. This time I had courgette,yellow pepper,carrot and parsnip and chopped tomatoes.
Adding vegetables to the cottage pie is a good way to make my daughter eat them.
When the mince was browned I added all vegetables and a tiny bit of water and let it boil on medium until all cooked. I think it was about 20 minutes or so.
When the potatoes are boiled get rid of the water and make the mash as you like it. I make it quite hard for the cottage pie.
If your mix of mince and vegetables is ready line it in a oven dish. Mine is quite big. And on top put the mash. I like adding some grated cheese on top as it gives it such a nice taste and crust.

Put it in a preheated oven (190 C) for about 25 min or until it becomes a little brown on the top.
