Stir fry pork with noodles

We don't normally buy pork but the other week we bought a big piece to roast. It was a lot left though so I cooked this stir fry with anything I could find in my kitchen.

Ingredients:
- 1 yellow pepper sliced in strips
- 1 carrot sliced finely longwise
- 1 courgette sliced finely longwise
- 1 onion finely sliced
- pork cut into strips
- 1 tbsp cashew oil
- 1 tsp crushed garlic
- 1 tsp crashed ginger
- 2 tbsp dark soy sauce
- salt and pepper
Heat the oil in a wok and add the pork when. If you are using fresh pork then you will ned to brown it. I used left overs so it took less time. Add the garlic, ginger , salt and pepper and stir for a couple of minutes. Add the vegetables and cook until they are cooked as per your liking. I like the carrot with a bit of a crunch. Just before the end add the soy sauce and cook for another minute.
Serve with noodles.
