Chicken legs are cheap and easy to eat and if you cook them like me your kids will love eating them too! Mine loves the tomato sauce that comes with it!
- boiled green beans;
- potatoes peeled, cut into squares and boiled;
- a dollop of butter;
- chopped parsley for the potatoes(during the winter i tend to buy frozen one);
- 6 chicken legs ( you can use more but just increase the tomato paste );
- garlic cloves peeled and diced - as many as you prefer; i add quite a lot as we romanians love garlic!
- vegetable oil enough to cook the chicken;
- tomato paste- i used a 250 ml but that is because we like it "tomaty":);
- 500 ml of chicken stock;
- salt and pepper per your taste; i tend not to add as i prefer the natural taste;plus is better for kids;
Boil the green beans and potatoes in separate pans. When the potatoes are boiled rinse the water and add the butter to mix. Add the chopped parsley and mix.
The beans can just be left as they are as they are yummy enough.
Put a couple of tablespoons of oil into a pan big enough to fit your chicken. Heat the pan with the oil on the hob and when the oil is hot add the chicken legs. At the same time add the chopped garlic. Cook on a medium hot as you don't want the garlic to burn.
When the chicken is browned on all sides you can take the garlic out if you prefer.
Add the tomato paste and let it cook a couple of minutes like that. Mix a lot as you don't want the tomato paste to burn you just want it to fry a tiny bit.
On top add around 500 ml of stock or as much as you need to cover the chicken. Cover with a lid and cook on a medium heat until is boiling. Then reduce the heat to low and cook until the sauce thickens.
Make sure you mix every now and then as it might burn.
If not thick enough you can always add some cornflower but it should be ok.
Serve as above and pofta buna!!!
